Really easy pasta
This is my quick, cheap, go to pasta dinner. It’s basically a Neapolitan sauce - Naples is one of the oldest continuously inhabited cities in the world. I top it with mozzarella cheese for the protein, calcium and fat, not the most traditionally toppings, but the flavours work as they do in the classic Naples pizza. The sauce can be frozen, and so its great for a batch cook. In terms of what shape of pasta to give your little one I would experiment with different shapes, BUT, I would never buy specific kids shaped pasta, first it’s way more expensive, second, it’s always inferior in quality and third it’s not really blw if they are eating a completely different pasta to you! If your little one prefers smaller shapes then cut standard pasta into smaller pieces once cooked. If you want to make sure your dinner is hot and theirs is less hot then rinse their pasta under cold water before combining with the sauce.
Makes enough for 2 grown-ups and a little one
Ingredients
260g dried pasta
2tbsp extra virgin olive oil (the good stuff as you want to flavour the sauce)
1 garlic crushed
1 tsp oregano
150g mozzarella – finely chopped
Salt to season grown-ups
2 tins of chopped tomatoes (approx 700-800g)
Method
1. Gently fry the crushed garlic in oil for around 30 seconds, add chop tomatoes and oregano and simmer for 30 minutes, stirring occasionally.
2. Cook pasta. Remove little ones portion of pasta, cool under running water and mix with the some of the sauce. Add salt to season the remaining grown-up sauce.
3. Sprinkle over the mozzarella before serving.
