A historic pasta
This is my take on a classic tomato and mascarpone pasta. A super easy, quick and nutritious meal for the family. The tomatoes give a nod to your veg intake and the mascarpone provides fat, calcium and protein! It's a lovely creamy warming dish. Mascarpone originated in the late 16th century so this dish has some history.
Makes enough sauce for 2 grown-ups and baby
Ingredients
2 tins of chopped tomatoes
150g mascarpone cheese
2 tbsp fresh basil finely chopped
2 crushed garlic cloves
1 tbsp olive oil
Method
1. Heat oil in pan on moderate heat add crushed garlic, gently fry for 10-20 seconds then add chop tomatoes.
2. Add chopped basil and then bubble gently away on a low heat for around 20 mins. Doing so will make the sauce nice and sweet, removing the bitterness of the tomatoes.
3. Add the mascarpone cheese and stir through on a low heat until combined and warmed through. Mix with your chosen pasta! Easy!
Tips
Try different pasta shapes with little one – I found at different stages Zahara managed better with some shapes than others. She loves rigatoni cut in half at the moment as she scoops her fingers through them like rings!
