Blood dressing salad
This is one of my Halloween dishs for you all! The dressing is really red and glupy – perfect blood for a little vampire! It is actually a middle eastern salad dressing made with pomegranate molasses to give it that lovely red colour and a subtle sweetness. It also uses the lovely sumac spice which is also red, and gives a distinctive complementary tangy flavour. So many Halloween foods for kids are pretty unhealthy that I thought what can I make that’s healthy – I am pretty chuffed with my blood dressing salad. Keep your eyes posted for my next goulish creation over the next week. Salad is often questioned on whether it’s suitable for little ones, and the short answer is yes! At the end of the day it’s no different to any other food. Obviously for young babies you would need to cut the salad into grabable sized pieces.
Plenty for 2 grown-ups and a little one
Ingredients
For the blood dressing
30ml pomegranate molasses
75ml extra virgin olive oil
25ml cider vinegar
¼ tsp dried mint
1 tsp sumac
Pinch of salt for grown-ups
For the salad
2 baby gem lettuces – cut into bite size pieces
3-4 radishes – sliced thinly
15 cherry tomatoes quartered
6 spring onions finely chopped
¼ cucumber cut into thin slices
½ garlic clove crushed
Method
1. Prep the salad and place in a bowl, separate little ones portion.
2. Mix all dressing ingredients and drizzle around a tsp-tbsp on to little ones portion. Then add salt to the remaining dressing to add to the grown-ups portion.
