The hot and cold - apple pie sticks n classic custard dip
Apple pie spans countries with variations across Europe and North America but one thing they all have in common is that it best served warm with something creamy, my preference is with something creamy and cold! I have developed these apple pie sticks as an easier alternative than making the apple filling for apple pie, plus they are refined sugar free! The custard is standard powdered custard mixed up as per instructions with milk (but not with any sugar i.e. Ignore instructions on that) that I clingfilm and pop in the fridge to cool down. I have opted for a custard dip as that way little one is not over indulging on powdered custard, which in my view holds little nutritional value. You can make your own custard but I have avoided that as it will contain raw-ish eggs and that is not safe for little ones (UK Lion stamp on eggs is not full-prof either – happy to explain why if you ask). I make the sticks up beforehand and then pop them in oven to cook just as we sit down to eat dinner – they take around 20-25 minutes to cook, perfect timing for an alternative dessert to the common blw desserts of yogurt and/or fruit!
Makes around 8-10 sticks
Ingredients
130g plain flour
½ tsp baking powder
1 tsp mixed spice
2 eating apples – grated
75g porridge oats
1 egg beaten
40g raisins or sultanas
4 tbsp vegetable oil
Method
1. Mix all ingredients asides from oil in bowl.
2. Stir through the oil and then take around 2 ½ - 3 tbsp of the mixture and shape into long (8-10cm) sticks that are around 2cm in width and approx. 1cm thick.
3. Place them on a baking tray in a preheated 180C fan oven for 20-25 minutes. Best served warm from the oven.
