Simple summer salad
This is my go to salad when I have a BBQ, it's lovely and fresh. It has a trace of Greek with the feta. I use globe basil, when I have some available, which gives it a lovely spiceyness, normal basil works well too. In Greek and Roman cultures, basil represented hate and misfortune; because of this, gardeners would often shout abuses at their plants to help them grow. It seems that no one could agree on the properties of basil, with divided opinions on whether it had medical benefits or whether it contained poison. This is such a simple salad packed full of flavour, and perfect for baby led weaning. It also looks really pretty before you mix to serve!
Makes enough for 2 grown-ups and little one
Ingredients
150-200g cherry tomatoes cut into quarters
60g feta cheese
1 tbsp finely chopped globe basil (normal basil works too)
1 tbsp extra virgin olive oil
*salt for grown-ups portion
Method
1. Plan tomatoes in a bowl, sprinkle basil on top, and then crumble feta cheese. Drizzle on olive oil.
2. Mix before serving (and add salt to taste to grown-ups portion).
Tips
Remember to cut cherry tomatoes into quarters for little one to reduce choking risk.
